These were a HUGE hit for dinner tonight. The whole family loved them. They were a nice change to the regular mini pizzas we have when I need something quick to fix. The flavor of the meat mixture was awesome and they tasted so good baked into a tortilla! And 70 calories and 2 WW points+! Woot woot!

Mini Mexican Pizzas

Servings: 12 Pizzas

Equipment

  • 1 standard muffin tin

Ingredients 

  • 3-4 large whole-wheat flour tortillas, enough for 12 3-inch circles
  • 1 cup cooked ground turkey
  • ยฝ cup salsa, of choice
  • 2 teaspoons taco seasoning
  • ยฝ cup low-fat refried beans
  • ยฝ cup low-fat Mexican blend cheese

Toppings

Instructions 

  • Preheat oven to 425 degrees, and spray a 12-count muffin tin with non-stick cooking spray.
  • Lay the tortillas out and cut 3-inch circles out of each one. Press each 3-inch tortilla circle into the cups of the cupcake tin.
  • In a small bowl mix together the cooked ground turkey, salsa, taco seasoning, and refried beans. ย Stir until well combined.ย Scoop 2 tablespoons of the meat mixture into each wrap.
  • Top each meat-filled cup with shredded cheese, and bake in the preheated oven for 12-15 minutes, or until cheese is melted.
  • Serve fresh with toppings and additional salsa for dipping!

  1. Another win! This was so delicious! I did a couple things differently, however. I didn’t use meat, just beans. (Vegetarian) Also, I heated the tortillas a bit before putting them into the muffin tin so they wouldn’t break apart. The results were fantastic! I’m definitely adding this recipe to my list of regulars.
