Our lives have been revolving around cross country and lacrosse at our house. They both have practice twice during the week and then we have games all day on Saturday. Yesterday was our last game and I feel so much more freedom! Having kids involved in busy sports can be tough. This is why I love to still have a hearty meal for my family and soup is the perfect thing!
Since I am obsessed with all things tuscan garlic… (seriously you have got to try this Creamy Tuscan Garlic Chicken), I knew that a soup version of this popular dish had to be made.

You are going to love how quick and easy this soup is to make! You will love the creamy soup base and everything inside is so delicious. Tortellini, chicken, diced tomatoes, spinach, and white beans. It all comes together perfectly and it is SO delicious!

Ingredients
- 2 Tablespoons butter
- 1 small white onion diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 28 ounce can diced tomatoes
- 1 15 ounce can white beans drained and rinsed
- 1 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1 Tablespoon italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups cooked and shredded chicken I used rotisserie
- 9 ounce refrigerated tortellini
- 2 cups spinach
Instructions
- In a large pot over medium heat, heat up the butter. Add onion and garlic and cook until tender. Add chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, Italian seasoning, salt and pepper. Bring to a simmer.
- Add the chicken, tortellini, and spinach. Let simmer for 10 minutes to thicken up and for the tortellini to cook.

I make this recipe all the time but I recommend using parm as a topping or adding after cutting the heat instead of mixing it in with everything else. Otherwise it will get gummed up

Can I make ahead and freeze?
You can make the soup ahead but don’t freeze the soup with the tortellini in it. That needs to be cooked and added in fresh, right before serving!
I made it this afternoon. I made a half a recipe. I did not put cream in it. Added tomato juice. Did not put in spinach. Added a sliced carrot. Used garlic powder and added a little Stevia. It is very good.
Follow this recipe exactly how it is you will not be disappointed!!!!!
We LOVE this soup!! I substitute hot sausage in place of chicken for a spicy treat!
I can not tell you how excited I was to find this recipe without canned soup or cream cheese!! I was a caterer and hubby was a chef so we are not fans of either!

This recipe is AMAZING! Instead of chicken I use ground spicy/medium Italian sausage. I cook the sausage first and then I add it to the soup at the end. AMAZING!!!!
Make this all the time exactly as written – well sometimes I add sausage too as reviewer suggested. Whole family loves it!!

Ohhhh my goodness!!! I made this last night for the family (exactly as the recipe reads…well, maybe I added a lil extra garlic with just a pinch less salt) and they could not get enough of it!! It is a super easy recipe and can prep & cook in less than 30 min. Soooo flavorful and just the right amount of creamy, not overkill. No doubt I will make this again & again! Thank you for this deliciousness!!
Side note: I did add 2 chopped zucchini for a little extra veggie content. AMAZING!! 🙂
We love this recipe so much and have served it numerous times. Has anyone replaced the heavy cream with oat or almond milk for a bit healthier version?
This was very yummy! I enjoy more broth in my soup so i would suggest getting double the chicken broth and heavy cream
