- Combine the Corn, Peppers, Onions, and Cheese: Add the drained corn, peppers, onions, and cheese to a large bowl.
- Make the Dressing: To make the dressing, add mayonnaise, taco seasoning, and lime juice to a medium bowl then whisk to combine.

This is the absolute BEST salad to make in advance! Itโs even better as it sits. So, follow my tips below for making this salad ahead of time and for storing leftovers, if you have any! Lastly, stir in the corn chips just before serving and add the amount of chips you desire, it’s up to you!
- In the Refrigerator: Store the leftover salad in an airtight container for up to 2 days. I recommend trying to remove the chips before putting it in the fridge to avoid soggy Fritos.
- Make Ahead: Prepare at least 2 hours or up to 1 day in advance. Leave out the corn chips then cover and refrigerate until ready to serve! Finally, add the chips right before serving then stir and enjoy!

Funny I seen your recipe. I have been making this salad for years. I got the recipe from Schwan’s Home delivery. I am asked to make this all the time for parties. Everything is the same but I use chili cheese fritos minus the taco seasoning, lime and cilantro.
I can not stand mayo, do you think Greek yogurt or sour cream would be a good substitute?
