How to Make Homemade Pancake Mix

This recipe is a no-brainer! Making homemade pancake mix from scratch is super simple and seriously tastes so much better. This mix is as delicious as it is easy!

  1. Add: In a large bowl, add flour, baking powder, sugar, and salt.
  2. Stir to Combine: Whisk the pancake mix ingredients together until combined. Store in a sealed container and keep in a dry cool place.

How To Use The Mix To Make Pancakes

  1. Combine: In a medium-sized bowl, combine ยพ cup of milk, 1 egg, and 2 tablespoons of vegetable oil. Add 1 cup of homemade pancake mix and stir until just combined. Donโ€™t overmix the wet and dry ingredients. If you have lumps, they will give you the lightest, fluffiest texture!
  2. Cook: Drop ยผ cup of the pancake mixture onto a heated, buttered skillet on medium heat, wait for those bubbles to form on top to ensure you don’t end up with gooey middles. Then, cook until golden brown on both sides and enjoy!

  2. Can this mix be used for waffles also.? How do you get waffles light and not cake like thickness? Whatโ€™s the trick so they are light and fluffy ? Issue adding extra oil? Also why use only large eggs specifically in waffles books ? Thx so much.

      To Make Waffles: In a medium bowl, combine 1 cup of milk, 1 egg, and 3 tablespoons of oil. Add 1 cup of pancake mix and stir until combined. The extra oil creates a crispier golden texture, just how a waffle should be! Pour 1/4 cup of the waffle mixture onto a heated, buttered waffle iron. Follow the manual instructions for using your waffle iron. The size of your waffle iron will determine how much batter you use!

    1. Hi Joanne, thank you for your question. I would say to start with 1 teaspoon vanilla, and 1 teaspoon cinnamon. You could add more depending on your taste preferences. Let me know how they turn out!

    Homemade Pancake Mix is a winner and keeper! Iโ€™ve made it several times and my granddaughters say I make the best pancakes! I so glad not to buy a mix at the grocery store!

    Hmmm. Not sure where we went wrong here. Recipe is pretty straight forward but these were dense and not at all fluffy.

    What can I add to make them fluffy like regular pancakes now that I have a big jar of this mix? I donโ€™t want to throw it away if I can help it.

    1. Check your baking powder to make sure itโ€™s not old/expired. Baking powder is what makes them rise and be fluffy. Take some and put it in a small ball of warm water and it should bubble/fizz. If it doesnโ€™t Iโ€™d buy a new package of it and add the new baking powder to your recipe.

      You can also try letting the batter sit for a few minutes before pouring the pancakes and cooking.

  6. How many pancakes does it make total for one cup of pancake mix? I see it says 4 people but does one cup make like 6 pancakes?
