How to Make Homemade Pancake Mix
This recipe is a no-brainer! Making homemade pancake mix from scratch is super simple and seriously tastes so much better. This mix is as delicious as it is easy!
- Add: In a large bowl, add flour, baking powder, sugar, and salt.
- Stir to Combine: Whisk the pancake mix ingredients together until combined. Store in a sealed container and keep in a dry cool place.
How To Use The Mix To Make Pancakes
- Combine: In a medium-sized bowl, combine ยพ cup of milk, 1 egg, and 2 tablespoons of vegetable oil. Add 1 cup of homemade pancake mix and stir until just combined. Donโt overmix the wet and dry ingredients. If you have lumps, they will give you the lightest, fluffiest texture!
- Cook: Drop ยผ cup of the pancake mixture onto a heated, buttered skillet on medium heat, wait for those bubbles to form on top to ensure you don’t end up with gooey middles. Then, cook until golden brown on both sides and enjoy!
Storing Homemade Pancake Mix
- At Room Temperature: This homemade mix stays fresh just as long as a store-bought versionโabout 6 to 8 months. Keep it in a cool, dark place, and make sure your jar or container is tightly sealed to lock in freshness!

Egg isn’t listed in the ingredients list but is listed in the directions. ???
Hi Debbie! You only add the egg, milk and vegetable oil when you are ready to use the mix and make the pancakes. I hope this helps!
Can you use plant-based milk?
For sure! I actually use almond milk sometimes!
This recipe for pancakes looks so very easy and great. Thank you so much. I will
certainly try it and I will try some of your other amazing recipes!
Thank you for sharing your recipe
Can this mix be used for waffles also.? How do you get waffles light and not cake like thickness? Whatโs the trick so they are light and fluffy ? Issue adding extra oil? Also why use only large eggs specifically in waffles books ? Thx so much.
Hi Jeanne, thank you for commenting! I can’t believe I didn’t have those instructions in my post! I went in and added them, but here you go!
To Make Waffles: In a medium bowl, combine 1 cup of milk, 1 egg, and 3 tablespoons of oil. Add 1 cup of pancake mix and stir until combined. The extra oil creates a crispier golden texture, just how a waffle should be! Pour 1/4 cup of the waffle mixture onto a heated, buttered waffle iron. Follow the manual instructions for using your waffle iron. The size of your waffle iron will determine how much batter you use!
I saw a comment about doubling. Have you doubled and stored? How did they come out?
Hi Shermaine, that should work just fine, just don’t let it sit longer than 6-8 months on the shelf.
Alyssa how much vanilla and cinnamon would I use for making one recipe of pancakes from this mix?
Hi Joanne, thank you for your question. I would say to start with 1 teaspoon vanilla, and 1 teaspoon cinnamon. You could add more depending on your taste preferences. Let me know how they turn out!
Worst recipe ever..double it and the consistency was awful..hoping it tastes good, but wouldn’t try this recipe again. Don’t recommend.
Good flavor but not as fluffy that I like. Perhaps it needs more baking powder.
Homemade Pancake Mix is a winner and keeper! Iโve made it several times and my granddaughters say I make the best pancakes! I so glad not to buy a mix at the grocery store!
Somehow 1 cup of milk wasnโt nearly enough
Hmmm. Not sure where we went wrong here. Recipe is pretty straight forward but these were dense and not at all fluffy.
What can I add to make them fluffy like regular pancakes now that I have a big jar of this mix? I donโt want to throw it away if I can help it.
Check your baking powder to make sure itโs not old/expired. Baking powder is what makes them rise and be fluffy. Take some and put it in a small ball of warm water and it should bubble/fizz. If it doesnโt Iโd buy a new package of it and add the new baking powder to your recipe.
You can also try letting the batter sit for a few minutes before pouring the pancakes and cooking.
How many pancakes does it make total for one cup of pancake mix? I see it says 4 people but does one cup make like 6 pancakes?
Hi there, happy New Year to you! I was wondering if you can use this recipe for waffles as well?
