- Flour:ย Gives structure to the bread.
- Baking soda:ย Leavening agent that causes the bread to rise.

- Fresh strawberries: Chopped & tossed in flour
How to Make Baked Bread
-
Prep: Preheat oven to 375F degrees. Spray two 9×5 loaf pan with nonstick spray. Set aside.
-
Large bowl: In a large bowl, using a KitchenAid Stand Mixer with paddle attachment cream butter and sugar together until light and fluffy.
-
Small bowl: In a small bowl, beat eggs using a fork. Add eggs to sugar mixture and beat until combined. Add mashed bananas and mix until combined.
-
Sift dry ingredients: Sift all dry ingredients: flour, baking soda, and salt. Slowly add sifted dry ingredients to banana mixture and mix until flour is just combined. DO NOT OVER MIX! Fold in floured covered strawberries.
-
Bake: Pour batter into prepared loaf pans and bake at 375*F for 15 minutes. REDUCE heat to 350*F and bake for an additional 30 minutes until edges are slightly brown or until toothpick inserted into center comes out clean. Let cool completely before removing from loaf pans.
Variations and Substitutions
- Butter:ย Salted butter will also work for this. Just leave out the pinch of salt.
- Sugar:ย If you love a little more sweetness, substitute white sugar for brown sugar or going healthier try coconut sugar.
- Bananas:ย Use frozen bananas by thawing them overnight at room temperature. If there is any liquid from the bananas, simply discard that before mashing in the recipe.
- Chocolate chips:ย Who can resist chocolate! Chocolate chips can be sprinkled on top, in the batter or both!
- Nuts or seeds:ย I do love walnuts but pecans, sunflower seeds or pecans also make for an added soft crunch.
- Fresh Local fruit: Use whatever you find that looks amazing at your local farmers market.ย Try cranberries, blueberries or raspberries change this banana bread into something fresh and fruity!

This is excellent! The only thing I did different was bake it in a 13x 9 pan for 350 for about 40 minutes. No changes to ingredients or measurements.
Hi Alyssa,
I am very interested in making this recipe and wondered if I wanted to make only 1 load pan, would I halve all the ingredients? Thank you!
Hi Eileen, thank you for the question. Yes you can cut this recipe in half to make one loaf. Let me know how it turns out!
I’m a teenager who’s obsessed with sugar and this was really good. A great way to use up the borderline fermented bananas. I nor my mom likes cooked fruit (apples are an exception), and I didn’t have enough, so I only used 1 cup of strawberries and 2 bananas. Thus, it was a little less flavorful, but I also reduced the… Flavors, lol. Nice idea, would do again if I need to use strawberries and bananas ๐
Just made this recipe did not like it , it did not rise at all and I followed recipe to the T. I think if I make it again I will no divide in 2 pans I ended up throwing it out
Hi Sandy, I’m so sorry to hear your bread didn’t turn out. Have you checked the expiration on your baking soda? That can have an affect on if the bread will rise. Again, I’m sorry to hear that you spent the time and effort to make something that you couldn’t even enjoy, that sounds super frustrating!
Delicious! Came out perfect the first time I made it. Added vanilla.
Second time…To make it a little less caloric…Used half monkfruit and half sugar. And used half of the butter and added some applesauce.
I didn’t have loaf pan, so I used a cake pan, looks and smells good, I added a bit of vanilla extract.
Very good bread! I made it EXACTLY as detailed in the recipe and the results were a flavorful, soft, and moist bread. It’s was devoured in one day.
