Iโ€™ve loved homegrown tomatoes since I was a kid, and this easy bruschetta recipe is one of my favorite ways to use them. The fresh basil, garlic, olive oil, and crispy toasted bread with that balsamic glaze make such a good flavor!

  • Tomato Type: Instead of Roma tomatoes, cherry tomatoes work well, or use fresh ripe tomatoes from your garden.
  • Bread: Use French bread, ciabatta, or sourdough in place of a baguette.

How to Make Bruschetta

Use up all your fresh tomatoes with this tried and true favorite. You could also make my favoriteย tomato toast! This appetizer is perfect for any occasion and pairs well with myย garlic lemon chicken and asparagus pasta.

  1. Broil Bread: Sliceย a baguetteย and place it on a baking sheet.ย Brushย the tops of the slices withย olive oilย and broil for 2-3 minutes, until golden brown. Remove from the oven and allow to cool.
  2. Make Topping: In a medium sizedย bowl, addย Roma tomatoes,ย mozzarella cheese, balsamic vinegar,ย olive oil,ย minced garlic, basil,ย andย salt and black pepper.
  3. Mix: Stir the mixture until well combined.
  4. Top & Serve: Top the bread with the bruschetta mixture and a drizzle of balsamic glaze, then serve.

Classic Bruschetta

Crispy toasted bread topped with a bright, garlicky tomato mixture makes this bruschetta the easiest appetizer!

Ingredients 

  • 1 baguette
  • olive oil
  • 5 diced Roma tomatoes
  • ยผ cup shredded mozzarella cheese
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 2 minced garlic cloves
  • ยผ cup thinly sliced basil
  • salt and pepper to taste
  • balsamic glaze

Instructions 

  • Slice 1 baguette and place it on a baking sheet. Brush the tops of the slices with olive oil and broil for 2-3 minutes, until browned. Remove from the oven and allow to cool.
  • In a medium-sized bowl, combine 5 diced Roma tomatoes, ยผ cup shredded mozzarella cheese, 1 tablespoon balsamic vinegar, 1 tablespoon olive oil, 2 minced garlic cloves, ยผ cup thinly sliced basil, and salt and pepper .
  • Top the bread with the mixture and drizzle with balsamic glaze, and serve.

Notes

Leftover Instructions
  • Fridge: Bruschetta is best served the day itโ€™s made, but the tomato mixture can be stored in an airtight container in the fridge for up to 3 days. Stir before serving, then spoon it over toasted bread.
  • Make Ahead: I donโ€™t recommend making the tomato mixture more than a few hours ahead. You can slice and toast the baguette 1 day in advance, then cool completely and store it in an airtight container at room temperature

  1. Hi Alyssa. Just love your recipes. I feel like I would make this frequently, except I find the diced tomatoes messy. Iโ€™m sloppy, as are others, with bits of tomatoes dropping off when biting in to them. Any way of incorporating some of the ingredients /toppings together, in sort of a jellied type consistency. Sort of like a spread, with just a bit of chunkiness. Love it, just cringe when I see a tomato land on my nearly white carpet when entertaining. Thanks if you could conquer this one for me, and others.

    So delicious! Thanks for the recipe. Question though, do you peel the tomatoes (as in water bath til skins slip off)? And can the tomato topping be made a day in advance or do you think itโ€™s best made up fresh?

    Love your recipes! Iโ€™ve made this over the years itโ€™s yummy I actually use It with garlic bread it adds a lot of flavor I usually use the new york Texas garlic bread its already sliced! I will definitely use this recipe! I also add black olives. Iโ€™ve collected a lot of your recipes! Keep em coming Gf!
