- Cook the Chicken: In aย large skilletย add olive oil and cook the chicken on medium-high heat for 3-5 minutes on each side (or until browned) and until no longer pink in the center. Remove the chicken and set it aside.
- Make Sauce: Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese to the skillet. Whisk over medium-high heat until it starts to thicken.ย
- Add Vegetables: Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt.ย
- Combine: Add the chicken back to the pan and serve over pasta if desired.

Storing Leftovers

- In the Refrigerator: Let the chicken cool completely. Within 2 hours of cooking, place the chicken in an airtight container and it will last for 3-4 days.
- In the Freezer: You can freeze this after cooking it for a quick and easy freezer meal! Store it in an airtight container and it will last 6 months.
- To Reheat: If frozen, let the chicken thaw in the refrigerator overnight. Once thawed, you can heat up the chicken on the stove over medium heat. You need whisk sauce thoroughly to get the sauce back to its original creamy consistency.ย Add additional chicken broth or cream if your sauce is breaking.

This was really good even though i didn’t have spinach or sun dried tomatoes! Next time will buy that because sure it ill be even better. Will definitely add to my recipes to make again.
I just made this for dinner tonight, and it was delicious! My husband even said, “I would be more than happy if I got this at a restaurant!” I chuckled because it was exactly what others have said here in the comments, almost word for word! I did use fresh, whole garlic, 3 large cloves minced finely so that it eventually melted into the sauce. I added it to the un-drained skillet after cooking the chicken. At that point, I also tossed in a couple heaping tbsps. of flour, along with a pat of butter, and cooked it all for a few minutes before proceeding with the sauce. (In the past, I have bad luck with Alfredo sauces not thickening and /or separating into cheese clumps and grease! This roux was a little extra insurance, and it worked great!). The sauce, which I of course doubled, was smooth, creamy, rich and flavorful! Next time, I might add the sundried tomatoes earlier so they soften a bit more and mingle with the sauce a little better. What a great combination of flavors! Total dinner success! I love your blog, and I can’t wait to try more of your recipes! Thanks so much!

I made it as an afternoon meal. This is an exquisite recipe. The light flavor or the chicken complements the garlic parmesan sauce. However, I do believe that pasta should be a requirement and not just a suggestion. Because the flavor is too strong by itself. Regardless, amazing recipe.
