I have made this numerous times. Always turns out perfect. The only change I make i use fresh diced garlic. We will substitute shrimp for the chicken. The sauce is amazing always over rice.

I followed your recipe except that I used some grape tomatoes sliced in half instead of the sun dried tomatoes because I had some I needed to use up. I added cooked orzo when I put the chicken back into the pan. This recipe is a winner!
OMG!! Iโve made this several times but today I altered the recipe a bit. I used fresh minced garlic instead of powder, about 1/2 tsp corn starch to thicken and instead of plain chicken broth, I used chicken tomato bullion (bc I was out of regular) you guys!!!! So freaking good!!

I used leftover ship bought roast chicken cut into pieces and warmed it up in some of the oil from the tomatoes. I also used light cooking cream and added olives and mushrooms (did a fridge clean out). Yum!!

Yummmmm!! I love sundries tomatoes!! What was I supposed to do with the oil? I added kale instead of spinach (thatโs all I had) and I doubled the sauce as you mentioned. The ones packed in oil is what I prefer but the dried tomatoes will work as well.

I have a question about the chicken. Are they thinly sliced strips of chicken you cook or the whole breast but pounded thinly ?
For these I purchased the Costco frozen chicken and they are thinly cut like that already. You can pound fresh chicken like that or you can cut them like a butterfly to have two thinly sliced chicken breasts.
