- Cook the Chicken: In a large skillet add olive oil and cook the chicken on medium-high heat for 3-5 minutes on each side (or until browned) and until no longer pink in the center. Remove the chicken and set it aside.
- Make Sauce: Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese to the skillet. Whisk over medium-high heat until it starts to thicken.
- Add Vegetables: Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt.
- Combine: Add the chicken back to the pan and serve over pasta if desired.

Storing Leftovers

- In the Refrigerator: Let the chicken cool completely. Within 2 hours of cooking, place the chicken in an airtight container and it will last for 3-4 days.
- In the Freezer: You can freeze this after cooking it for a quick and easy freezer meal! Store it in an airtight container and it will last 6 months.
- To Reheat: If frozen, let the chicken thaw in the refrigerator overnight. Once thawed, you can heat up the chicken on the stove over medium heat. You need whisk sauce thoroughly to get the sauce back to its original creamy consistency. Add additional chicken broth or cream if your sauce is breaking.

This was delicious! A big hit with even my picky teenage eaters! I had a little more chicken than the recipe called for, so I doubled the sauce. I don’t personally like sun dried tomatoes, so I put diced fresh tomato instead, and it was perfect. For some reason, my sauce did not thicken after quite a bit of time, so I added a little water/corn starch mix, and that worked fine. I absolutely loved this recipe and will definitely make it again!

I have made this many times. We love it. I sometimes leave out the tomatoes if I don’t have them. Sometimes I add mushrooms. Tonight I shredded my own fresh Parmesan and it was even more delicious and still easy. I used tortellini as my pasta. I buy everything at Aldi so this is very affordable.

Has anyone made this using an instapot? I’m considering throwing everything together that way. I’ve made it a few times as the recipe calls for and it’s delicious. I’ve even made it in the crockpot and the chicken shredded nicely to put on top of pasta. Just curious about Instapot….
Can you substitute fat free half and half for the heavy cream?
