I get giddy when I see all of the girl scout cookie stands start to pop up all over the place! But then, what do you do when they are all gone and you’ve eaten your last cookie? Well, you make these amazing recipes! I have rounded up some of the best girls scout desserts! They not only have the taste of your classic girl scout cookie but I have changed up the texture by adding in all sorts of desserts! There will be something for everyone!

I can’t get over the flavor of thin mints or the texture of a good Samoa cookie. I mean, these recipes have the most amazing combination of flavors! Brownies with ooey-gooey texture, caramel drizzled on top, or chocolate melted in the middle… These girl scout recipes are SOO good. There are so many to try that the hardest part is going to be choosing which one that you start with first! Go ahead and try one. I bet you can’t stop there!

  • Read the recipe and tips: If you take the time to read the entire girl scout recipe all the way through before baking, you will find some specific things that I found helpful! Plus, reading it all the way through will tell you any substitutions that you can use!
  • Room temperature ingredients: It takes a bit of thought beforehand but it’s well worth it! Set your ingredients out and get them to room temperature before baking. This helps create a smooth, uniform texture and it really helps when combining your ingredients together!
  • Keep your over door closed: The less that you open that door while baking, the better off your food will be! When you let out all of the hot air then it interrupts the baking. This means thatyour food might not end up cooked properly! Use your oven light instead!
  • Chill the cookie dough: If you chill the cookie dough before you make it, then your cookies are less likely to spread. This means that you will end up with a thicker, more solid cookie that has a better taste! Once the dough is done chilling, take it out. Let it sit at room temperature for about 5-10 minutes. Then, shape it into balls, put them on a baking sheet and you are good to go!

These Thin Mints are way better than the popular boxed version! Perfectly crispy chocolaty cookies are sweetened with just the right amount of mint!
Ingredients: unsalted butter, granulated sugar, pure vanilla extract, peppermint extract, all-purpose flour, dutch-processed cocoa powder, kosher salt, chocolate melting wafers, coconut oil, peppermint extract

Thin Mint Milkshake

Samoa Thumbprint Cookies

All of the things that you love about the classic Samoa Cookie in a cute little thumbprint cookie! A shortbread crust dipped in chocolate with the caramel coconut center and drizzled in chocolate!
Ingredients: butter, white sugar, vanilla extract, all-purpose flour, shredded sweetened coconut, store-bought or homemade soft caramels, milk, shredded sweetened coconut, semi sweet chocolate chips

Holy yum!  I loved the mint flavor in these!  And the tiny thin mint cookies that coated the outside made them extra amazing!
Ingredients: Guittards Green Mint chips, milk chocolate chips, Chex Cereal, shortening, Thin Mint Cookies or Keebler grasshopper cookies, powdered sugar

These are also so fun for St Patricks Day or anytime you want a fun treat!  I will be making these again, especially when thin mints are my favorite!
