This is THE BEST BEEF STEW I HAVE EVER HAD! If you guys are looking for a comforting, hearty and blow you away with flavor beef stew, this is your recipe. Ok, I am getting a little ahead of myself because I am so excited about this beef stew.

Who gets excited about a beef stew? Apparently, this girl. This has the most crazy tender beef with hearty vegetables and the absolutely best rich and delicious sauce! I am a total beef stew lover, especially when it cools down. It took me a couple of recipes to get it right.

These are my requirements for the perfect beef stew:

  • Tender melt-in-your-mouth beef
  • A thick and rich sauce
  • Big hearty pieces of vegetables, preferably carrots, potatoes, and mushrooms.

This stew had all of that and more and my family couldn’t get enough of it!

What is Bourguignon?

The word bourguignon comes from a dish that is French and is called Buruandy in English. Bourguignon is similar to a beef stew but has a few variations of ingredients and a much deeper flavoring. A classic bourguignon has the presence of red wine in the recipe, which does cook out and is safe for kids to enjoy this bourguignon recipe. This bourguignon recipe is thick and hearty with loads of flavor!

A few extra steps are involved in making this stew, but I promise it is worth it. Once you cook the bacon and pan-sear the meat, you throw it all into the crockpot and let it do its thing. This meal is truly the best-flavored stew that I have ever had. I know that your family will love slow-cooker beef bourguignon just as much as we did!

  • Bacon: Cook it up and chop it for the recipe.
  • Beef Chuck: Boneless beef chuck cooks up to be so tender and delicious.
  • Red Cooking Wine: This will cook out slowly and is added for flavoring.
  • Chicken broth: The chicken broth is added for flavor and helps to cook the meat and veggies.
  • Tomato sauce: Ths is flavorful and soaks in the meat and vegetables.
  • Soy sauce: The soy sauce has a rich and slightly sweet flavoring.

How to Make Slow Cooker Beef Bourguignon

This stew starts off with cooking some bacon. But THEN you pan sear the meat in the bacon drippings. Pan searing is just that extra step to make the edges crisp and the inside tender. Plus it just seals in the flavor! Most good beef stews do have red wine in them. This really brings out the deep and rich flavor in the sauce. But rest assured, the alcohol does get cooked out. But I promise it is necessary in really bringing out this amazing flavor in the stew!

  1. Cook the meats: In a large skillet, cook bacon over medium-high heat until crisp. Put bacon in the slow cooker. Salt and pepper the beef and add to the skillet, and sear on each side for 2-3 minutes. Transfer beef to the slow cooker.
  2. Whisk together sauces: Add the red wine to the skillet scraping down the brown bits on the side. Allow it to simmer and reduce and slowly add chicken broth, tomato sauce, and soy sauce. Slowly whisk in the flour. Add then add the sauce to the slow cooker.
  3. Add in remaining ingredients: Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker. Give it a good stir and then cook on low until beef is tender for 8-10 hours or high for 6-Garnish with fresh parsley and serve with mashed potatoes if desired.

  • Garlic: if you don’t have garlic on hand, substitute the garlic for 1/4 teaspoon of garlic powder.
  • Bay leaves: add in bay leaves for more flavoring and intensity with this soup.

I freeze them laying down and take them out the night before I am wanting to serve it. Ingredients 

  • 5 slices bacon finely chopped
  • 3 pounds boneless beef chuck cut to 1 inch cubes
  • 1 cup red cooking wine
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup soy sauce
  • 1/4 cup flour
  • 3 garlic cloves finely chopped
  • 2 Tablespoons thyme finely chopped
  • 5 medium Carrots sliced
  • 1 pound baby potatoes I used tri color
  • 8 ounces fresh mushrooms sliced
  • fresh chopped parsley for garnish

Instructions

  3. Tried proportionally reducing for 1# beef. Not nearly enough liquid. Added 2 cups broth and cup of wine to cover ingredients.

    1. I thought the same thing but decided to trust the process and it came out fantastic.. the mushrooms do release a little more liquid during the cooking process but overall it’s just very hearty in the end and everything was cooked through and delicious

    We love this recipe. Sometimes I make it on stovetop in le crueset because I don’t have enough time for a slow cooker. I usually increase bacon and definitely am heavy handed with wine. No mushrooms for us. I make Egyptian rice to pair with this and everyone enjoys. Thanks!

    Overall a decent recipe, but I’d say greatly less soy sauce. Maybe one tablespoon. Otherwise, it takes over the flavors and it’s much too salty. And perhaps beef broth instead of chicken for a richer, beefier flavor.

    I LOVE your recipes, I’ve made so many of them. This slow cooker bourguignon is exceptional. I made it for my husband & son for a football weekend. My reward was when my son walked into the house, wanted to know what smelled so good, and promptly got himself a bowl! DELICIOUS!

    1. I usually use an 8-quart slow cooker but have plenty of room, so I think 6 quarts should be fine!

    This was AMAZING!! I always prefer Brisket but had a Chuck Roast in the freezer – so I decided to go with it. This was so good that I couldn’t tell the difference. I think next time I will thicken the sauce a little more – maybe toss the meat in flour before browning? Served with Basmati Rice to grab the juices – since there were Potatoes already in the dish.

    We are Not allowed because of stomach issues to use mushrooms or onion (fodmap) so i substitute seeded zucchini and yellow squash. It was just as devine.

    I made this recipe this past Saturday night for three friends. We all loved it! I did make some tweaks. I used pancetta instead of bacon. I added in a little more wine (1/2 cup?) and also used beef bone broth versus chicken broth. I used Tamari instead of soy sauce and added in some tomato paste – maybe 1/3 cup? I also used more garlic (5-6 cloves) and grated it. I added the garlic and thyme to the wine/broth/sauce as it was cooking down. I cooked the mushrooms with some diced shallots before adding to the slow cooker. I also threw in two bay leaves. Lastly, at the end of cooking, I removed all the solids and simmered down the remaining sauce with a little flour versus adding flour in the beginning. Once it was more like a thick gravy or glaze, I put it back with everything else and removed the bay leaves. It sounds like I changed a lot, but I mostly just made tweaks. The broth it made had SO much rich flavor, and the house smelled amazing! I think I could have just had a bowl of the broth. It was a great and pretty easy recipe. I enjoyed not being stuck in the kitchen, and my guests were all raving about the meal. Was delicious paired with some buttery garlic bread. Thanks for the recipe!

  15. The ingredient list states to cut the beef into 1 inch cubes but the recipe directions say to brown on all sides. This reads to me that the 3 pound roast should not be cut into cubes. Can you clarify?
