Not a fan of this recipe. The oregano was way overpowering. The flavors did not taste like traditional Jambalaya. Was also very liquidy. Fresh tomatoes are a much better substitute for canned diced tomatoes. Won’t make again.

Can you freeze leftovers for another time?
You sure can! Just store them in an airtight container in your freezer. They will last about 2 months. When you are ready to eat it, thaw it overnight in your fridge and then reheat it on the stove just before serving.
Delish flavors, however next time we will cook rice separately and top with jambalaya.

I serve this with long grained rice. But in a pinch, I will cook up some instant rice and serve it over that as well!

I like to use long grain rice. If you use instant rice, cook it before and just add it to the Jambalaya just before serving.
I made this over the past weekend and added the rice for the last hour like mentioned and ended up with crunchy rice in my jumbalaya. ๐
Lesson learned to not add rice to it but it did turn out very tasty.
