What You Need to Make Southwest Chicken Egg Rolls
You can’t go wrong with these Southwest egg rolls. It is one of my favorites and has loads of veggies and other tasty ingredients. Check out the recipe card at the bottom of the post for all of the exact measurements.
- Chicken: To make this easy, you could buy a rotisserie chicken and shred it for these egg rolls. I also use canned chicken in a pinch!
- Veggies: Black beans, corn, red bell peppers, green onions, jalapeรฑos, spinach
- Seasonings: Chili powder, cumin, garlic powder, salt and pepper.
- Monterey Cheese: This adds a lot of flavor and of course, cheese makes these so delicious.
- Oil: You can use vegetable oil or canola oil to fry the egg rolls.
- Egg Roll Wrappers: You can find egg roll wrappers in the refrigerated section at your local grocery store.
- Cilantro Ranch Dressing: This is optional, but I LOVE dipping the finished egg rolls in this yummy ranch dressing. It’s so creamy!
How to Make Southwest Chicken Egg Rolls
These Southwest chicken egg rolls are easy to put together! The spicy, southwest feel will be everything you ever wanted and more. You won’t be able to stop after eating just one egg roll!
- Combine the Filling Ingredients: In a medium-sized mixing bowl combine the chicken, black beans, corn, red bell pepper, green onions, jalapeรฑo, and spinach.
- Mix in the Seasonings and Cheese: Add the chili powder, cumin, garlic, salt, pepper, and shredded cheese. Mix until incorporated.
- Fill and Roll the Egg Rolls: Place an egg roll wrapper on a clean surface so that it is a diamond. Spoon about two tablespoons of the mixture into the center. Wet the sides of the wrapper with a little bit of water. Fold up the bottom half and then tightly fold in the sides and roll up. Repeat until you have used all of the egg roll wrappers.
- Fry the Egg Rolls: In a large skillet, add the oil until it is about an inch up the side of the pan and heat to medium-high. Add the egg rolls and fry for about 1-2 minutes. Flip and cook the egg rolls until they are golden brown.
- Serve: Serve with your favorite dipping sauce!

Yes! You definitely make these Southwest chicken egg rolls in the air fryer! Here are the instructions on how to do that instead:
- Brush with Oil: Brush each roll with a small amount of oil and place in an air fryer.
- Cook: Cook the egg rolls at 375 degrees Fahrenheit in a single layer, seam side down, for 6 minutes.
- Flip the Egg Rolls: Rotate each egg roll and cook for 3 more minutes or until golden brown on all sides.
Tips and Variations
Let me help you make these Southwest chicken egg rolls a success! Here are some tips and variations to make this recipe easy and taste just the way you like them!
- Egg wash: For a crispy egg roll add an egg wash to the tips of the wrap and/or to the outside of the egg roll wrapper.
- Rolling Tip: Keep your egg rolls covered while you are rolling them so they don’t dry out.
- Don’t Overcrowd: Try not to fill your pan with too many egg rolls. They will become crowded and stick together. This will decrease the temperature and won’t let them cook evenly.
- Cooling Tip: Once fried, place the egg rolls on a cooling rack with a paper towel or plate underneath to catch any of the oil that drips off the egg rolls. Putting them directly on a paper towel will create too much steam and become soggy sitting there.
- Cheese: Add in a Mexican blend of cheese or a jalapeรฑo cheese for more spice.
- Filling Variations: Avocado or tomatoes chopped up add a sweet and fresh taste. Try adding more colors of bell peppers, chopped onions, or mushrooms.
Storing Leftover Egg Rolls

- In the Refrigerator: Store any leftovers in the fridge in an airtight container for up to 4 days.
- In the Freezer: These are great to freeze after they have cooked and cooled. Store in an air-tight container or Ziplock bag before placing them in the freezer. They will last in the freezer for up to 3 months. You do not need to thaw them before reheating them. They can be reheated straight from the freezer!
- To Reheat: To make sure your leftovers are nice and crispy, cook them in the air fryer at 375 degrees Fahrenheit for five minutes.

I added extra everything and used 2 1/2 cups of very packed spinach!! The dressing is amazing I just added a little more cilantro then what it called for. Very yummy!!
