One more week left of school. One. As I look back at this last school year it has flown by! I feel like we were just celebrating Christmas and now we are heading into summer. We are all looking forward to the summer time at our house. Bring on the BBQs, s’mores, swimming, and late nights!

We have been so busy with moving into our new house that we have hardly had any time for a home cooked meal. This Tuscan Garlic Chicken was the first meal that I have made in a while and it is TO DIE FOR!!!

This meal tastes like it is straight from a restaurant. I couldn’t even get over how amazing the creamy sauce was! It has such a delicious creamy garlic taste with spinach and sun dried tomatoes. We all fell in love with the first bite. I couldn’t believe how easy and amazing it was!

Put this meal at the top of your must make list! It was one of the best things our family has had. You can even serve this over pasta making it a delicious meal.

You guys are going to love this just as much as we did!

Ingredients

  • pounds boneless skinless chicken breasts thinly sliced
  • 2 Tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • 1/2 cup parmesan cheese
  • 1 cup spinach chopped
  • 1/2 cup sun dried tomatoes

Instructions

  1. In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
  2. Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over pasta if desired.

    I keep forgetting to post a comment. This recipe is soooo OMG delicious and yummy, it makes our home smell so good. I saw a comment that said it is restaurant quality and yes it is! My family comes running when I make it. I have made it over 6 six times and they love it. I also add artichokes to it and their eyes are so big and I never have enough for the next day!

  2. Very good. I will make it again. I added a little white wine and I’m going to try it with chicken thighs or pork tenderloin. It would even be great with shrimp

    Good recipe. Made as stated. Think the chicken was a bit bland. It needs some seasoning while it cooks. Sauce is nummy. Next time, I’ll use fresh basil in place of spinach.

  5. Looks so delicious ! This is going into the meal plan for next week. Do you recommend the sun dried tomatoes that are in a jar packed in oil or just the package of sun dried tomatoes with no liquid?

    1. I use the dried ones. They plump up in the heavy cream chicken broth mixture. This is sooooo good! Made it many times.

    Not sure what I’m doing wrong. Have made this twice and find the Parmesan cheese just gathers together in a giant lump, never really melts. The sauce tastes great otherwise, but I’m not sure if I’ll do this again.

    I loved this recipe the flavor is really good. I definitely think that the sauce needs to be doubled there wasn’t enough for a side of thin spaghetti. I’ll definitely make this again yummo!

  10. I really love this recipe. I’ve made it twice and it’s epic! I made a small tweak however. Instead of olive oil, I use the oil from the jar of sun dried tomatoes to cook the chicken and you should definitely season the chicken before cooking.
