Tips and Storing Homemade Pancake Mix
- Double: Feel free to double the mix or even triple it. I like to make lots of pancakes at once and freeze them for even quicker hot breakfasts in the morning.
- Wait: When cooking your pancakes wait for those bubbles to form on top to ensure you don’t end up with gooey middles.
- Butter: For extra richness, substitute melted butter for the oil. So yummy!
- Don’t over mix: It’s important when you mix your wet with dry ingredients, you don’t over mix. It’s ok to have a few little lumps.
- Storage: The shelf life of this homemade mix is about the same as any you’d find at the store. This should keep for 6-8 months in a cool dark place. Make sure your jar or container has a tight seal as well.

Can you use olive or avacado oil instead of vegetable oil?
Yes! It may just change the flavor of your pancakes slightly.
Made this mix with a gluten free flour blend. I used soy milk to make them, and added a couple tablespoons extra of the dry mix to make the batter a bit thicker. They were perfect. Even my picky 7 year old devoured them.
Very fluffy but spread too much. Delicious nevertheless!
Hi
Love your your recipe. But is it possible to make the the pancake without eggs??
You can try flaxseed.
This recipe is awesome. Just made the pancakes for my husband and I. The money-saving benefit is supreme….but the taste of these pancakes is awesome. Win-Win!

Hello! This is just a recipe for the dry pancake mix, not the actual pancakes. There is a tip on making them into pancakes in the post though if you would like further instructions!
I followed your recipe above with flour, sugar, salt and baking powder but my pancakes were thin. Suggestions?
Oh no! What liquid/egg ratio did you use to make the pancakes?
If you use self raising flour you don’t need the baking powder and salt, but needs the sugar and veg oil. When making waffles, separate the yoke from the egg whites and whip the whites up into peaks and fold it into the batter makes for fluffy waffles
Can this be done with whole wheat flour instead?
Sure! Let me know how they turn out!
Yummy and fluffy pancakes. I think the negative comments are older ones based on the original
Recipe. Itโs been update and the current recipe posted works great! My kids loved it!
Where did you get the beautiful jar???
I was looking for that style jar as well and wondering what size she used as I don’t see it anywhere on here. Recipe looks great and would like to do this for my sons.
I made the necessary adjustment by adding 1 tablespoon of baking soda.
Then used a bit more powder, to make the mixture the consistency I like for the pan. Turned out great!
Just curious…….do you get a fluffy pancake using so little leavening?
These end up being very fluffy and soft!
Shouldnโt the milk, egg and oil be in the list of ingredients also?
Hi! This recipe is just for the actual powdered pancake mix. To make them into pancakes then, you need to add in the milk, eggs, and vegetable oil!
What do you have to do to the mix to make it for waffles?
Keep the mix the same but when you go to mix it up, just use a little less liquid and let it sit on the counter for 5 min before using. This helps the mixture thicken.
Love it!!!!
