How Do You Make Creamy Tuscan Tortellini Soup?

You are going to love how quick and easy this tortellini soup recipe is to make! You will love the creamy base and everything inside is so delicious. It only takes 25 minutes, and dinner is served! It all comes together perfectly and is SO delicious!

  1. Melt the butter in a large pot over medium heat. Add diced onion and cook until translucent and tender. Add the garlic and cook for 30 seconds until fragrant.
  2. Add the chicken broth, diced tomatoes, white beans, parmesan cheese, Italian seasoning, salt and pepper.
  3. Pour in the heavy cream and slowly heat the soup to a simmer.
  4. Stir in the shredded chicken, cheese tortellini, and spinach, then simmer the soup for 10 minutes to thicken and allow the tortellini to cook. Taste and adjust the salt and pepper if needed. Enjoy!

  • Meat: Change up your meat and use turkey sausage instead!

How to Store Leftover Tortellini Soup

This creamy Tuscan garlic tortellini soup makes great leftovers! As you store the soup, the flavors continue to meld and become more delicious. Itโ€™s so easy to reheat and makes the perfect lunch or dinner for chilly winter days.

  • In the Refrigerator: Once completely cooled, add to a ziplock bag or airtight container and store in the refrigerator for 3 to 4 days. If you make this soup ahead of time, wait to add the tortellini when you reheat the soup.
  • To Reheat: Thaw frozen soup in the refrigerator overnight, or place the ziplock bag in a bowl of hot water. Once thawed, transfer the soup to a pot or slow cooker and heat until warmed through. If you left out the tortellini, add it now and cook for a few minutes before serving.

  1. Made this soup for the first time. I used 2 chicken breasts and used the broth in the soup.
    Soup turned out delicious. Husband loved it!

    1. Almond milk unfortunately will not be as thick, rich creamy. It may work but it will alter the taste as well as it setting up properly.

  2. Have made the Tuscan Tortellini Soup twice and my husband and I loved it. The ingredients are things that we always have on hand and it’s so easy, the only change was using “Tuscan Seasoning” in place of “Italian Seasoning” and hubby added a little red pepper to his. This soup has been added to our rotation of favorites and I shared your link with my daughter’s.

  10. Hi I am always looking for recipes to make when camping that use ingredients the do not require a lot of refrigerated items. I was thinking of substituting evaporated milk for the cream, using canned chicken and using the dried version of tortellini. What do you think?

  11. Oh man, I love the idea of this soup. But every time Iโ€™ve made it I always have to double the broth! 4 cups is just not enough for the amount of other things going in the soup. Has anyone else ran into this?

    1. I have actually had this happen once, and realized I accidentally bought a bigger pack then recommended in the recipe of the tortellini so it absorbs way more of my broth. Was still delicious but was more like a creamy pasta. I would just make sure youโ€™re using the recommended size of tortellini for the recipe.

  12. Just made this tonight for supper and it was delicious! Couple of tweaks for me…I erroneously bought crushed tomaotoes instead of diced and I decided to just roll with them since thatโ€™s what I had. I used about 1/2 the can and it worked out fine. I also used 1/2 package of frozen spinach and finally I added a good heaping table spoon of garlic and herb cream cheese and that really added another level of richness and creaminess. Thanks for such a great recipe!
