Slow Cooker Chicken Fajita Soup


Today I am sharing with you a quick and easy slow cooker soup from Six Sisters’ newest cookbook the 12 days of Christmas.  I have become friends with the Six Sisters through blogging and conferences.  They continue to amaze me with all that they do and I love how they put an importance on family and traditions.  They started blogging as a way to keep in touch with all six sisters and it has grown into something incredible.  This is now their third cookbook that they have published.  They have such delicious and easy family friendly recipes.  I couldn’t wait to look through their newest cookbook and choose something yummy to make!

In the book they include 144 ideas for fun family traditions.  From homemade gifts to quick and easy dinners and desserts.  This book is packed with so many fun things.  I love that it shows that the holidays aren’t just about the gifts, but it is also about cooking for our family, sanity saving Christmas tips, and even shows ways we can give back.  It gave our family so many fun new traditions to try and bring the excitement of Christmas to our house!

They also include 12 Quick and Easy Family Dinners.  It is so important for our family to eat dinner together every night but sometimes difficult with the busyness of the holidays.  This is why I especially LOVE my slow cooker.  This Chicken Fajita Soup only took a total of 5 minutes to throw into the slow cooker.  It was able to cook all day and we had a creamy and delicious soup that was ready for dinner.  It is made with minimal ingredients but was packed with amazing flavor.  We topped it with cheese and all of our favorite toppings and this soup became an instant favorite.   My family all agreed that it was one of the best soups that we have had!  I am so glad that I have this cookbook because we will make this soup over and over again.  I know that it will become a family favorite at your house as well!

Slow Cooker Chicken Fajita Soup

A delicious and easy soup that takes 5 minutes to throw into the crockpot and you have an amazing flavor packed soup ready for dinner!
Serves: 4-5
  • 1 pound boneless, skinless chicken breasts
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1 cup salsa
  • 2 cups frozen corn
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1½ cups water
  • 1 teaspoon ground cumin
  • ½ teaspoon dried cilantro
  • 1 cup shredded cheddar cheese
  • Optional Toppings:
  • sour cream
  • diced tomatoes
  • green onions
  • cilantro
  • lettuce
  • diced avocado
  • tortilla strips
  1. Spray your slow cooker with cooking spray. Add chicken to the bottom of the slow cooker.
  2. In a medium sized mixing bowl, mix cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Pour over the top of chicken.
  3. Cook on low for 4-6 hours. Remove the chicken and shred with two forks. Place back into the slow cooker and add shredded cheese. Continue cooking until cheese has melted about 15 minutes. Serve with your favorite toppings.

    • I use frozen all of the time. I didn’t use it in this recipe but I am sure it would be just fine. Just cook it a little bit longer until it is fork tender and cooked throughout and shreds easily.

  18. Made this last night while I slept, then packed it for lunch and supper at work today. Absolutely loved it! My husband also said it was delicious. I will definitely be making it again!

    • I always put in frozen chicken but I did you thawed in this recipe. Just cook a little longer and make sure it is fork tender and cooked throughout. It should shred easily.

  23. We really enjoyed this. I would give it 4 stars, but the kids gobbled it up and talked about how good it was, so it gets a combined 5. I served it with white rice and Asian Coleslaw for an easy meal. For us it served 4 with about 2 servings left over.

  25. Made this last night. Delicious! Cut the recipe in half as there were only two of us. Cooked it on the stove, and bbq’d the chicken prior to adding. Followed everything else exactly. Definitely recommend!

  27. is it safe to cook raw chicken on low in a crock pot? Worried about bacteria growth!

    • It is fine if you cook it until it is no longer pink and internal temp of 165 degrees. But honestly when the soup was done cooking, my chicken just shredded apart because it was so tender. It was amazing!

      The chicken cooks completely….of course you can put raw chicken in the crock pot and cook on low…..been doing it for years my family is fine no one has ever gotten sick.

  28. My husband and I like heat and after I prepared this as it is, I thought it was too bland. I added some chili pepper and cayenne pepper and it really helped. Plus I think once I add on the toppings when serving it will be even better.

  32. I made this with thawed chicken and it turned it great! Definitely made the top 3 of my favorite soup recipe list. I topped the soup with fresh avocado slices for a balance of smooth and chunky and budgeted the recipe using Target private-label products for an individual serving being under $4.

  33. What can you replace the cream of chicken soup with…we have dairy allergies at my house. :/

    • There is a cream soup substitution recipe once The recipe uses milk but I just replace with soy or lactose free for my son who is lactose intolerant. It turned out fine!

  38. Made it! This is delicious. Loved how it used ingredients that I didn’t have to go out shopping for. I used fresh cilantro and no cheese. Cheese would be a delicious addition but it’s already fantastic as is and I don’t want the extra fat/calories.

  39. Made this yesterday and it was quite good. I didn’t have two cans of cream of chicken so I used one cream of celery and one cream of chicken. I used 1 tablespoon of my taco seasoning which has chili powder, paprika and red pepper flakes to give it more kick. I also added half a fresh jalapeño. My husband added some tabasco to his bowl to give it even more heat. I always put mushrooms in my chili and other mexican dishes so I added some of those too. This was really easy and delish. Thank you!

  40. This was yummy! Didn’t have dried cilantro but it was still great without it! Hubby is going to make it at the fire station this week for the guys. This is a keeper!

  41. I threw this together before work with frozen chicken breast. I added a bit of garlic and onion powder and half a can of diced tomato wih green chilies (I like the spice!) cooked it for 6 hours on low and just got home and ate. IT’S AMAZING!!!!!!!!!

    My husband raved, “you made this!? It tastes like a chef made this!” It’s officially on the rotation!

  43. This is my second batch in a few weeks. I replaced salsa with a can of rotel. I also added diced onions and peppers along with a can of green chiles. This is amazing and I love it.

  47. Made this for dinner tonight and it was FANTASTIC! I made two minor changes: 1) tossed in a few splashes of Franks Red Hot Sauce before cooking (didn’t notice it at all) and 2) instead of 1 1/2 cups water, I used 3/4 cup water and 3/4 cup chicken stock. Six Sisters have done it again! My only regret is that it’s Lent so I can’t eat it for lunch tomorrow!

  50. This would be my second time making this soup. My boyfriend and his boys love when I make this! His son is so incredibly picky and the majority of the foods I make he doesn’t like but he was happy there was leftovers so he could eat it the next day. Making again tonight!

I always overdo things when it comes to slow cooker recipes so when I made it last week for my family of 4 (a 3 year old son who loves everything but only eats a little, and a 1 year old daughter who is a little picky but eats twice as much as the oldest), I added an additional can of soup and used 4 chicken breasts. It was amazing and we are having the frozen leftovers today over pasta instead of tortilla chips. I will definitely be frequenting your website often!

  63. i made this for tonight’s Christmas Day dinner. I had two large crockpots of soup beef vegetable and this recipe. This soup was the first to disappear. I would definitely make this again. Even my grandkids loved it. Thanks for sharing such an easy and delicious recipe.

  65. I have a 6qt. slow cooker. This recipe doesn’t make a lot so I’m wondering if my cooker would be too big. I would love to try this soup so any input would be appreciated. Thank you!

    • I used a 5 quart. You could use the 6 but you might have to reduce the cooking time a bit. The bigger it is the faster it can tend to cook.

  66. Can you freeze the soup and reheat it later? There is only two of us, so I know we will have a lot of leftovers. I can’t wait to try it! It’s in the crockpot now! Just a few more hours to go!

  77. I’ve made this multiple times, it’s one of our favorites. The only recommendation I would make is after you eat the first bowl you’ll want another but don’t do it you’ll regret it. Its very filling. We have also tried it with rotel tomatoes to give it extra kick.
